Lasagne Rolls

Ingredients:
• 12 lasagne (gluten free) noodles
• 1 lb. extra lean ground beef
• ½ ball shredded mozzarella cheese (or lactose-free cheddar)
• 1 jar sauce (or make your own)
• ½ onion chopped
• Oregano and parsley to taste


Directions:

Cook and drain noodles (and rinse gluten free) according to package and divide.

Heat oven to 350°F, foil a tray and put a thin layer of plain jar sauce.

In skillet, cook onion then beef over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain meat if needed.

Stir in rest of jar of sauce, oregano, parsley and simmer for 5 minutes.

Spread each noodle with meat sauce and sprinkle with cheese.

Carefully roll up each noodle and place on seam side down. Spoon remaining meat sauce on top. Cover with foil.

Bake for 30 minutes.

Sprinkle with more cheese (or parmesan) and serve.
